Grilled peaches with vanilla ice cream

A simple summer dessert for hot days…. I’m reminiscing about the past weekend when the sun shone so brightly, we sat in the garden for all our meals and sunbathed. We ate these as we lit the chiminea and the sun set. On the Sunday we even went rowing on the river!

Grilled peaches with vanilla ice cream

4 peaches, sliced in half and de-stoned
low-fat margerine
4 teaspoons sugar
1 teaspoon of cinnamon

Preheat the grill and place the peach halves onto a baking tray. Smear a knife-ful of margerine on the top of each peach, sprinkle with sugar and cinnamon and then pop under the grill for 8-10 minutes until the tops of the peaches are soft and caramelised. Serve with a lovely creamy vanilla ice cream such as Mackays or Haagen Daaz.

After the sun on Sunday, on Monday, you know it’s time to go back to work when the sea fog engulfs the horizon and it starts spitting! I do long for a proper summer here in Britain….
